Do you have a restricted diet? Whether by choice or not, making positive food choices can be very tricky at Christmas. When I was in my early 40s, I discovered that wheat was very difficult for me to digest. Now that I’m in my 60s, I am so glad that I don’t eat wheat  – it’s a restriction that frees me to say ‘No’ a great deal of food which is nutritionally pointless, not to mention the calories…but it can be difficult when you want to join in with friends and family.

So here’s a great recipe, tried and tested many times, that suits everyone. And you can make it as a cake or a pudding.
